History
The sugarcane spirit drink, or cachaça, as it is commonly known, is a tradition from the Brazilian colonial period; a recipe written by many hands that came to define the encounter of African, Portuguese and Indigenous cultures, as well as land cultivation and many other facets of Brazilian economic development since its birth in the mid-16th century.
Cachaça Pindorama is made in a distilery, through the combination of two processes: fermentation and distillation. All 100% natural, without any additives or accelerators. Our sugarcane is organic, cut daily, ground and transformed into a juice that is added to yeast made exclusively from non-GMO and organic corn. During the fermentation process, all the sugar is transformed into alcohol, creating a sugar-free drink that is then distilled throughout the day. The sweet notes found in Cachaça Pindorama come from the aromas and essential oils of sugar cane, which persist throughout the process.
During fermentation, the more than 100 hectares of Atlantic forest that surround the distilery give birth to a unique method, where the heat, humidity and atmospheric pressure generate the perfect conditions for the creation of this special drink, pure, full of flavor , intensity and history. The Fazenda das Palmasdistilery has existed for more than 160 years and carries within it the rich and complex trajectory of a drink internationally known as one of Brazil's greatest cultural treasures.
To guarantee the integrity of our product, and fidelity to this century-old process, Cachaça Pindorama is subjected to constant analysis and during its production process the first 20 initial liters (the head of the cachaça) are removed as well as its last 10 liters. (the tail of the cachaça), leaving only the purest and most precious part of the process, what we call 'the heart of the cachaça'.
Our boiler is powered exclusively using sugarcane bagasse, attesting to our commitment to the use of sustainable energy.
As 66% of the drink is water, we only use the purest water from a natural and protected source at our property; This water that comes from the bottom of the forest's water basin carries the DNA of a region blessed with one of the best climates on the planet, in a valley full of nature and respect for the environment.
The drink is subsequently stored in stainless steel barrels (Pindorama Silver) and in barrels made of Amburana (Pindorama Gold) and other Brazilian wood, where its special characteristics intensify.
